Roast Chicken

Ingredients
l Roasting Chicken (about 4 lbs.)
Salt & Pepper to taste
l Lemon, halved
2 Tbsp. Butter
2 Tbsp. Olive Oil
l/2 Cup Water
Cooking Instructions
Preheat oven to 425 degrees. Rinse chicken and pay dry. Salt and pepper inside of chicken and place l/2 lemon inside the chicken. Tie the legs together and place in a roasting pan. In a sauce pan, melt the butter with olive oil over low heat. Squeeze the remaining l/2 lemon into the mixture and brush over the chicken. Season with salt and pepper. Bake in the oven, basting often with the drippings until the meat is done or about l l/2 hours. Remove from the oven and place on serving plate. Let rest for 10 minutes and remove the lemon and squeeze into the pan juices. Stir in the l/2 cup of water and bring to a low boil, scraping up the brown bits and cook until the sauce is reduced (about 2 minutes). Defat the sauce. Remove the chicken from the bone and pour the sauce over it before serving.
